Banana Muffins

These muffins are DELICIOUS!  Paleo friendly, gluten free, dairy free and they actually taste good!  Nothing processed in these bad boys!  Only 146 calories per muffin.  Give them a try…you won’t be sorry!

 

Ingredients:

4 very ripe bananas, mashed

3 egg whites

2 whole eggs

1/2 cup almond butter

2 tbsp apple sauce

1 tsp vanilla

1/2 cup coconut flour

2 tsp cinnamon

1 tsp baking powder

1 tsp baking soda

1/4 tsp salt

1/3 cup dark chocolate chips (optional)

 

Preheat oven to 350 degrees.  Line a muffin tin with cups or spray muffin tin with coconut oil spray.  In a large bowl whisk together bananas, eggs, egg whites, almond butter, apple sauce and vanilla until well combined.  Stir in coconut flour, cinnamon, baking powder, baking soda and salt until incorporated.  Fold in chocolate chips if using.  Divide batter equally among 12 muffin cups.  Bake for 20-25 minutes or until toothpick inserted in the centre of muffin comes out clean.  Let cool completely and store in a airtight container in the fridge or freezer.
