Minestrone Soup


It’s that time of year!  The weather is getting colder, days are getting shorter and there is nothing better then a delicious bowl of warm soup.  Try out this great recipe.  It’s SUPER healthy, loaded with fibre and vegetarian friendly for all those non meat eaters out there.  For you meat eaters…this soup is so hearty, you won’t even miss it!  Enjoy!

Minestrone Soup

2 TBSP Olive Oil

1 small onion, minced

1/2 cup frozen, cut, green beans

1/2 cup chopped zucchini

1/2 cup minced celery

4 tsp minced garlic cloves

4 cups vegetable broth

3 cans (19oz each) mixed bean medley

1 can (19oz) diced tomatoes, drained

1/2 cup shredded carrots

1 1/2 tsp dried oregano

1 1/2 tsp salt

1 tsp pepper

1 tsp dried basil

1/4 tsp dried thyme

2 TBSP minced fresh parsley

4 cups hot water

4 cups fresh baby spinach

1/2 cup Ditali pasta (or other very small pasta)

Parmesan Cheese, freshly grated


Heat oil in large soup pot.  Saute onions, beans, zucchini, celery and garlic until onions are translucent (about 5 minutes)

Add vegetable broth, drained tomatoes, bean medley, carrots, hot water and spices to the pot.  Bring to a boil and simmer for 20 minutes.

Add spinach and pasta.  Cook for 20 minutes or until pasta is cooked.

Top individual servings with 1 TBSP freshly grated parmesan cheese

Makes approx 11 cups
