These pancakes are packed with protein, have no added sugar or fat and are absolutely delicious!
1 cup rolled oats
1 cup egg whites
1 cup 1% cottage cheese
1 tsp baking powder
1 tsp cinnamon
Mix all ingredients in a blender until smooth. Spray a non stick skillet with cooking spray or brush on a dab of coconut oil. Cook as you would regular pancakes! The extra batter can be kept in a tupperware container in the fridge for up to 3 days for a fast and easy breakfast option.
